Erythritol is a polyol or sugar alcohol of natural origin. It was discovered by the British chemist
John Stenhouse in 1848. The name erythritol may sound chemical, but it is a completely natural
sugar substitute. It does not contain alcohol or sugar. Erythritol is a sugar substitute isolated from
nature, which looks and tastes very similar to sugar (30% less sweet than sugar).
It is found in a variety of foods such as pears, watermelons, corn, mushrooms and grapes. It is also
found in some fermented foods and drinks such as beer, cheese, sake, soy sauce and wine. On an
industrial scale, it is produced from glucose by fermentation using yeast (Moniliella pollinis).
It is a good alternative to sugar because it does not add caloric value to the food. It does not have
any laxative effects, which makes it significantly different from other sweeteners. Namely, in the
body, most erythritol is absorbed into the bloodstream in the small intestine. Most of the ingested
erythritol (up to 90 percent) is excreted unchanged through the urine within 24 hours. Only 10
percent of ingested erythritol goes to the large intestine, and from there it is excreted in feces.
It is thermostable, which means it does not lose its sweetness even up to 160°C, and it is suitable for
preparing various desserts.
In the food industry, it has been used for decades to sweeten candies, chocolates, chewing,
gum,jams, fruit yogurts, shakes and various drinks.
