Acai or \u201ccabbage palm\u201d is a tropical palm tree native to the Amazon forests in South America. It grows abundantly in the floodplain forest in Varzea Amazon River basin in Brazil, where annual rainfall can exceed 2,500 mm. Akai palm typically grows 30-40 feet in height and grows in small groves of about 20 trees, but can be found in the dense forests up to 7,000 trees per hectare whose branches join to form the expanse of Amazonian forests. The fruit acai tree are harvested during the dry season from May to November, and then, is a vital component of nutrition of local inhabitants who drink up to 2 liters of diluted juice acai pulp per day. During the rest of the year akai continues to be regularly found in the daily diet of Brazilians, and makes 40% of the total food intake traditional Kabolko population. Akai pulp is traditionally served in gourds called \u201cCuias\u201d with tapioca and can be consumed either salty or sweet, and southern Brazil is eaten cold mixed with granola.
\nEvery acai tree provides up to 1,000 kg of fruits, where the individual weight of fruit just a few grams. The fruit acai palm is round and between 1.5 and 2 cm wide, with large seeds and a thin layer of pulp. Akai berries change color during ripening from white through olive green to shiny black, indicating that they are ready for picking. The highest quality berries have a mild white powdery coating on the shell.
\nOur acai comes from Pare in northern Brazil. Local residents who make a living from harvesting acai berry is known as Ribeirinhos or \u201cpeople who live on the river.\u201d They formed a cooperative to a daily read acai fruit and took it to the market, before it is transported downstream processing.
\nFresh fruit is then carefully cleaned and washed before the pulp is removed, pasteurized and frozen. Our acai freeze-dried within 24 hours after harvest in order to preserve the product without the use of radiation. The quality of our acai berry freeze-dried is evident by color; extremely deep purple color produced by anthocyanin cyanidin. Freeze-drying involves exposing acai pulp at temperatures from \u2013 40 \u00b0 C, a vacuum environment, which eliminates all the water through a process called sublimation. During the processing of acai berry through other methods of storage, such as spray drying (heating at temperatures over 80 \u00b0 C to remove moisture) and standard freeze may be an unpleasant brown powder.
\nAkai is rich in magnesium, calcium and a good source of iron. Calcium plays a role in many body functions, including contributing to the normal functioning of muscles, the transfer of information through the nervous system and maintaining healthy bones and teeth. Magnesium contributes to the maintenance of normal bones and teeth, normal muscle function, metabolism and reduces fatigue.
