Clean coconut syrup is a natural sweetener with a low glycemic index (GI of only 35) and is therefore suitable for diabetics because of very low amount of sugar that is absorbed into the blood. It is derived from a coconut nectar which is collected 2 times a day with buds of coconut palms (Cocos nucifera L.) in Sri Lanka. Coconuts buds are cut, and then folded into bamboo pipes that are closed at the end.
Coconut palms then become “nectar trees” and no longer bear coconuts. This nectar is called “Neera Drink.” It is a popular, tasty and healthy drink. It is a rich source of minerals, 17 amino acids, vitamin C, a variety B vitamins, and nearly has a neutral pH value. Coconut syrup is produced by heating the coconut nectar. With this procedure the coconut nectar becomes a thick syrup of a brownish color with a pleasant taste of caramel. In Sri Lanka it is also known as coconut honey.
